Healthy Peanut Butter Cups
Lately I have been craving chocolate more than usual, and that is no surprise. I usually crave chocolate, bread-y foods and coffee more when I am sleep-deprived! Right now real life has been overflowing and it’s not all so bad. So anyway, these healthy peanut butter cups have been a huge help in curbing that appetite for the wrong kind of chocolate treat.

I adapted this recipe from The Humbled Homemaker. I did not have protein powder like her recipe calls for so I processed some almonds into a powder to substitute that. It came out delicious! I would like to try it with peanuts or hazelnuts too…

Recipe for Healthy Peanut Butter Cups

4 Tbsp. melted extra virgin coconut oil
1/2 cup natural peanut butter
1/4 cup cocoa powder
stevia to taste (I used about 3 packets) OR 1T maple syrup
1 1/2 tsp. vanilla extract
1/2 scoop ground up almonds/ peanuts/ hazelnuts

1. Pour everything into a small saucepan and stir until completely melted, on a low-medium setting.

2. Pour batter into a lined cupcake pan.

3. Freeze for 1-2 hours and enjoy right away! They tend to melt pretty fast.

The kids loved them! They are like peanut butter cups and ice cream treats at the same time!
